Coconut Truffles

Coconut Truffles (aka Bunny Tails) from Pizzazzerie
No baking involved!

What You’ll Need:

  • 1 8oz package cream cheese, softened
  • 4-5 cups powdered sugar
  • 1 tsp almond extract
  • 2-3 cups sweetened coconut (in a bowl for rolling)

The How-to:

  • Basically, whip up the cream cheese until it’s no longer clumpy with a hand mixer. Gradually add the sugar until it holds shape, and somewhere in the middle add the almond extract.
  • Using a very tiny cookie scoop, scoop out roughly 1 tbsp sized balls and roll them in coconut, put them on a wax sheet and pop them in the fridge! I like these better when they’re cold.

This was the first new apartment recipe I made – so easy and clean up was a cinch! I found these around easter (hence the overly adorable nickname) – but they’re really sweet and easy to make! And easy to eat 😉
