Cinnamon Sugar Duffins

Cinnamon Sugar Donut Muffins (makes 12 duffins)

  • ¾ c sugar
  • 1 large egg
  • 1 ½ c all purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • ¼ c vegetable oil
  • ¾ c milk
  • 1 tsp vanilla

For the coating (I think I used -maybe- half of this, also, best to do this while the muffins are hot)

3 Tbs sugar
1 Tbs cinnamon

Preheat to 350 – Bake for 15-18 min (mine were in for 19 actually..)
Quickie instructions:

  1. Mix the egg + sugar, set aside.
  2. Mix the flour, salt, nutmeg + baking powder. Slowly mix into the egg mixture (don’t use a beater for this part)
  3. Mix in the milk, veg oil and vanilla – scoop into muffin tin (your batter should be gooey and not too terribly runny, don’t overmix the wet ingredients.) and bake.
  4. Let the buggers cool for like, 5 minutes. Then take them and roll them in a bowl with the cinnamon/sugar mixture and eat immediately. All of them.
